Begin by washing the zucchinis and cutting off the ends. Slice each zucchini into ¼-inch thick rounds.
In a mixing bowl, combine olive oil, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Stir until well mixed.
Add the sliced zucchini to the bowl and toss them in the seasoning mixture until they’re evenly coated.
Preheat the air fryer to 400°F (200°C) for about 3-5 minutes.
Place the seasoned zucchini slices in the air fryer basket in a single layer. You may need to work in batches depending on the size of your air fryer.
Cook the zucchini at 400°F (200°C) for 10-12 minutes, shaking the basket halfway through the cooking time for even crisping.
If using, sprinkle the grated Parmesan cheese over the zucchini during the last 2 minutes of cooking for a cheesy finish.
Once done, carefully remove the zucchini from the air fryer and serve warm.
