Ingredients
  

  • 4 medium zucchinis About 2 pounds.
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese Optional.

Instructions
 

  • Begin by washing the zucchinis and cutting off the ends. Slice each zucchini into ¼-inch thick rounds.
  • In a mixing bowl, combine olive oil, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Stir until well mixed.
  • Add the sliced zucchini to the bowl and toss them in the seasoning mixture until they’re evenly coated.
  • Preheat the air fryer to 400°F (200°C) for about 3-5 minutes.
  • Place the seasoned zucchini slices in the air fryer basket in a single layer. You may need to work in batches depending on the size of your air fryer.
  • Cook the zucchini at 400°F (200°C) for 10-12 minutes, shaking the basket halfway through the cooking time for even crisping.
  • If using, sprinkle the grated Parmesan cheese over the zucchini during the last 2 minutes of cooking for a cheesy finish.
  • Once done, carefully remove the zucchini from the air fryer and serve warm.

Notes

Feel free to add a pinch of red pepper flakes for some heat.
For a vegan option, omit the Parmesan cheese or substitute it with a vegan cheese alternative.
Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer for best results.
