Ingredients
  

  • 1 cup unsalted butter 2 sticks
  • 1 cup brown sugar packed
  • 1/2 cup granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups dried cranberries
  • 1 cup white chocolate chips
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup dried cranberries chopped (for garnish)
  • 1/4 cup white chocolate shavings (for garnish)

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan or line it with parchment paper for easy removal.
  • In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until smooth and fluffy using an electric mixer.
  • Beat in the eggs, one at a time, followed by the vanilla extract until fully combined.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  • Fold in the dried cranberries and white chocolate chips with a rubber spatula.
  • Spread the batter evenly in the prepared baking pan and bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • While the bars are baking, prepare the frosting by beating together the softened cream cheese and butter until creamy.
  • Gradually add the powdered sugar and vanilla extract to the cream cheese mixture, mixing until smooth.
  • Once the bars are out of the oven and completely cooled, spread the cream cheese frosting evenly over the top.
  • Garnish with chopped dried cranberries and white chocolate shavings.
  • Cut the bars into squares and serve.

Notes

For a festive touch, you can add a few more chocolate shavings on top along with the cranberries.
These bars can be stored in an airtight container in the refrigerator for up to one week.
