Ingredients
  

  • 2 cups fresh cranberries About 8 oz.
  • 1 small red onion Finely chopped.
  • 1 piece jalapeño pepper Seeds removed and finely chopped.
  • 1/4 cup fresh cilantro Chopped.
  • 1/4 cup lime juice About 2 limes.
  • 1 tablespoon honey or agave syrup Adjust to taste.

Instructions
 

  • Start by rinsing the fresh cranberries under cold water and removing any stems or damaged ones.
  • In a mixing bowl, add the cranberries and roughly chop them with a knife or pulse them briefly in a food processor until coarsely chopped. Avoid pureeing them completely.
  • Add the chopped red onion, jalapeño, and chopped cilantro to the bowl with the cranberries.
  • Squeeze in the juice of 2 limes, add honey or agave syrup, and sprinkle with salt. Adjust honey and salt to your taste preference.
  • Gently mix everything together with a spoon until well combined.
  • Let the salsa sit for about 10 minutes to allow the flavors to meld together before serving.

Notes

Serve this cranberry salsa with tortilla chips, grilled chicken, or as a topping for tacos.
For added flavor, consider mixing in diced avocado or using a different pepper for additional heat.
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
