Equipment

  • 1 Instant Pot
  • 1 measuring cups and spoons
  • 1 cutting board

Ingredients

  • 1 cup dried black eyed peas About 200g.
  • 4 cups vegetable broth About 950ml.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 bay leaf
  • 1 tablespoon olive oil Optional for sautéing.

Instructions

  • Rinse the dried black eyed peas under cold water thoroughly, removing any debris or damaged peas.
  • Set the Instant Pot to 'Sauté' mode. If using olive oil, add it to the pot and allow it to heat for about 1 minute.
  • Add the diced onion and minced garlic to the pot. Sauté for about 3-4 minutes until the onions are translucent.
  • Add the rinsed black eyed peas to the pot along with the vegetable broth, salt, pepper, smoked paprika, and bay leaf. Stir to combine.
  • Close the Instant Pot lid and ensure the pressure valve is set to 'Sealing'. Set the Instant Pot to 'Manual' or 'Pressure Cook' mode on high for 20 minutes.
  • Once the cooking time is complete, allow the pressure to release naturally for about 10 minutes before carefully switching the valve to 'Venting' to release any remaining pressure.
  • Open the lid, discard the bay leaf, and stir the black eyed peas. Taste and adjust seasoning if necessary.
  • Serve warm and enjoy!

Notes

You can add diced tomatoes or chopped bell peppers for extra flavor and nutrition.
Feel free to substitute vegetable broth with chicken broth for a non-vegetarian version.
This dish pairs well with cornbread or rice.
