  • 1 mixing bowl
  • 1 spoon or spatula

Ingredients
  

  • 3 cups shredded cooked chicken about 2 large chicken breasts
  • 1 cup low-carb BBQ sauce preferably sugar-free
  • 1 cup shredded cheddar cheese
  • 1 cup cauliflower rice fresh or frozen
  • ½ cup cream cheese softened
  • ¼ cup diced red onion
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • to taste salt
  • to taste pepper
  • 1 tablespoon olive oil for greasing the dish

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Grease a 9x13 inch casserole dish with olive oil to prevent sticking.
  • In a mixing bowl, combine the shredded chicken, low-carb BBQ sauce, cream cheese, cauliflower rice, diced red onion, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are combined.
  • Transfer the chicken mixture to the greased casserole dish and spread it evenly.
  • Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  • Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
  • Once cooked, remove from the oven and let it cool for a few minutes before serving. Slice and serve warm.

Notes

For extra flavor, feel free to add chopped green onions or fresh herbs as garnish before serving.
