Preheat your oven to 350°F (175°C).
Grease a 9x13 inch casserole dish with olive oil to prevent sticking.
In a mixing bowl, combine the shredded chicken, low-carb BBQ sauce, cream cheese, cauliflower rice, diced red onion, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well until all ingredients are combined.
Transfer the chicken mixture to the greased casserole dish and spread it evenly.
Sprinkle the shredded cheddar cheese evenly over the top of the casserole.
Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly and the casserole is heated through.
Once cooked, remove from the oven and let it cool for a few minutes before serving. Slice and serve warm.
For extra flavor, feel free to add chopped green onions or fresh herbs as garnish before serving.
Pair this casserole with a side salad for a complete meal.
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave before serving.
