Ingredients
  

  • 500 g sausages your choice: pork, chicken, or vegetarian
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 medium bell pepper chopped
  • 2 medium carrots chopped
  • 2 medium potatoes cubed
  • 400 g canned chopped tomatoes
  • 300 ml vegetable or chicken broth
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • salt and pepper to taste
  • fresh parsley for garnish, optional

Instructions
 

  • Preheat your oven to 190°C (375°F).
  • In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
  • Remove the sausages from their casings and crumble them into the skillet. Cook until browned, approximately 6-8 minutes.
  • Stir in the chopped bell pepper, carrots, and potatoes. Cook for another 5 minutes, stirring occasionally.
  • Add the canned chopped tomatoes, broth, dried oregano, paprika, salt, and pepper. Mix thoroughly.
  • Transfer the mixture to a casserole dish and cover it with aluminum foil.
  • Bake in the preheated oven for 30 minutes. After this time, remove the foil and bake for an additional 15 minutes until the top is slightly golden and the potatoes are tender.
  • Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh parsley if desired before serving.

Notes

You can substitute or add other vegetables such as zucchini or green beans based on your preference.
For extra flavor, consider adding a splash of Worcestershire sauce or hot sauce for a kick.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
