Ingredients
  

  • 1 pound breakfast sausage mild or spicy
  • 2 cups shredded cheddar cheese
  • 1 cup almond flour or all-purpose flour
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • as needed spray cooking spray or additional oil for greasing

Instructions
 

  • Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
  • In a large mixing bowl, combine the breakfast sausage, shredded cheddar cheese, almond flour, grated Parmesan cheese, egg, garlic powder, onion powder, salt, and black pepper.
  • Mix all the ingredients together until well combined. You can use your hands for this step for better mixing.
  • Using your hands, scoop out small portions of the mixture and roll them into balls, about 1 inch in diameter. Place the balls on the prepared baking sheet, leaving some space between each one.
  • Bake in the preheated oven for about 20 minutes, or until the sausage balls are golden brown and cooked through.
  • Remove from the oven and let cool slightly before serving.

Notes

Feel free to substitute the cheddar cheese with your favorite cheese, such as pepper jack or mozzarella.
You can add herbs or spices of your choice to give the sausage cheese balls more flavor.
These balls can be made ahead of time and frozen. Just bake them from frozen for an additional 5-10 minutes.
