Ingredients
  

  • 1 pound Italian sausage sweet or spicy, casings removed
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 medium potatoes, peeled and diced (about 2 pounds)
  • 4 cups kale, chopped stems removed
  • 1 teaspoon dried thyme
  • 1 teaspoon salt adjust to taste
  • 1/2 teaspoon black pepper
  • 1 cup heavy cream optional for extra richness

Instructions
 

  • In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sausage, breaking it up with a spoon as it cooks, until browned (about 5-7 minutes).
  • Add the diced onion to the pot, cooking until it becomes translucent (about 3-4 minutes). Stir in the minced garlic and cook for another minute until fragrant.
  • Pour in the chicken broth and add the diced potatoes. Bring the mixture to a boil and then lower the heat to a simmer. Cook for about 15 minutes, or until the potatoes are tender.
  • Add the chopped kale, dried thyme, salt, and black pepper to the pot. Stir well and continue to simmer for another 5-7 minutes until the kale is wilted and tender.
  • If using, stir in the heavy cream for extra richness and let it heat through for a couple of minutes. Taste and adjust seasoning as needed.
  • Serve hot with crusty bread if desired.

Notes

For a lighter version, skip the heavy cream.
You can substitute the sausage with turkey or chicken sausage for a healthier option.
This soup can be stored in the refrigerator for about 3 days and tastes even better the next day.
Freeze portions for a quick meal later on.
