- 1 pound Italian sausage, casings removed
- 4 medium potatoes, diced About 2 pounds or 900 g
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale or spinach, chopped
- 1 teaspoon dried thyme
- 1 teaspoon paprika

- 2 tablespoons olive oil
In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until browned.
Add the chopped onion and minced garlic to the pot. Sauté for another 3-4 minutes until the onion is translucent.
Stir in the diced potatoes, chicken broth, dried thyme, and paprika. Bring the mixture to a boil.
Reduce heat to a simmer and cook for about 15-20 minutes, or until the potatoes are tender.
Once the potatoes are cooked, stir in the heavy cream and chopped kale or spinach. Season with salt and pepper to taste.
Allow the soup to heat through for another 5 minutes. Serve warm with crusty bread if desired.
