Ingredients
  

  • 1 pound Italian sausage, casings removed
  • 4 medium potatoes, diced About 2 pounds or 900 g
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale or spinach, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • 2 tablespoons olive oil

Instructions
 

  • In a large pot or Dutch oven, heat olive oil over medium heat. Add the Italian sausage, breaking it apart with a wooden spoon. Cook for about 5-7 minutes until browned.
  • Add the chopped onion and minced garlic to the pot. Sauté for another 3-4 minutes until the onion is translucent.
  • Stir in the diced potatoes, chicken broth, dried thyme, and paprika. Bring the mixture to a boil.
  • Reduce heat to a simmer and cook for about 15-20 minutes, or until the potatoes are tender.
  • Once the potatoes are cooked, stir in the heavy cream and chopped kale or spinach. Season with salt and pepper to taste.
  • Allow the soup to heat through for another 5 minutes. Serve warm with crusty bread if desired.

Notes

For a spicier kick, use spicy Italian sausage.
This soup can be stored in an airtight container in the refrigerator for up to 3 days.
You can also add additional vegetables such as carrots or celery for extra nutrition.
