Add the trimmed green beans to the skillet, stirring to combine all ingredients.
Cover the skillet and cook for an additional 10-15 minutes, or until the potatoes are fork-tender and green beans are cooked but still crisp. Stir occasionally to prevent sticking.
Taste and adjust seasoning if necessary.
Serve hot, garnished with chopped fresh parsley if desired.
