Ingredients
  

  • 1 pound smoked sausage, sliced You can substitute with turkey sausage or chicken sausage for a healthier option.
  • 1 pound baby potatoes, halved
  • 1 pound fresh green beans, trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • to taste salt
  • to taste pepper
  • optional fresh parsley, for garnish

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the sliced smoked sausage to the skillet, cooking until browned, about 5 minutes. Stir occasionally.
  • Add the halved baby potatoes to the skillet, seasoning with garlic powder, onion powder, paprika, salt, and pepper.
  • Cook the potatoes and sausage together for about 10 minutes, stirring occasionally, until the potatoes begin to soften.
  • Add the trimmed green beans to the skillet, stirring to combine all ingredients.
  • Cover the skillet and cook for an additional 10-15 minutes, or until the potatoes are fork-tender and green beans are cooked but still crisp. Stir occasionally to prevent sticking.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with chopped fresh parsley if desired.

Notes

You can substitute the smoked sausage with turkey sausage or chicken sausage for a healthier option.
Feel free to add other vegetables such as bell peppers or carrots for more variety.
