Ingredients
  

  • 1 pound Italian sausage, casing removed Can substitute with chicken sausage or turkey sausage for a lighter option.
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 medium bell pepper, diced Any color bell pepper can be used.
  • 1 medium zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • to taste fresh basil or parsley for garnish Optional garnish.

Instructions
 

  • Heat the olive oil in a large skillet over medium heat.
  • Add the Italian sausage to the skillet. Use a wooden spoon to break up the sausage as it cooks. Cook for about 5-7 minutes, or until browned and cooked through.
  • Once the sausage is cooked, add the diced onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is translucent.
  • Add the diced bell pepper and zucchini to the skillet. Continue cooking for another 5 minutes, stirring occasionally.
  • Toss in the cherry tomatoes, Italian seasoning, salt, and black pepper. Cook for an additional 3-5 minutes until the vegetables are tender and the tomatoes have softened.
  • Taste and adjust seasoning if necessary. Remove from heat.
  • Serve hot, garnished with fresh basil or parsley if desired.

Notes

You can substitute the Italian sausage with chicken sausage or turkey sausage for a lighter option.
Feel free to add other vegetables such as spinach, mushrooms, or carrots based on your preference.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave before serving.
