Ingredients
  

  • 1 pound ground sausage mild or spicy
  • 10 ounces diced tomatoes with green chilies Rotel
  • 8 ounces cream cheese softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • to taste jalapeños or hot sauce optional for spiciness
  • as needed tortilla chips for serving

Instructions
 

  • In a large skillet over medium heat, cook the ground sausage until browned and fully cooked, about 5-7 minutes. Break it up into small pieces with a wooden spoon as it cooks.
  • Drain any excess fat from the sausage and reduce heat to low.
  • Add the diced tomatoes with green chilies (including the juice), cream cheese, cheddar cheese, Monterey Jack cheese, garlic powder, onion powder, and black pepper to the skillet.
  • Stir the mixture until the cheeses melt and the dip becomes creamy, about 5-10 minutes.
  • Taste and adjust seasoning if necessary. For a spicier kick, you can add additional diced jalapeños or hot sauce.
  • Transfer the dip to a mixing bowl or directly serve it from the skillet. Serve warm with tortilla chips for dipping.

Notes

If you want to make this dip in a slow cooker, cook the sausage in a skillet and then transfer all ingredients to a slow cooker. Cook on low for 2-3 hours until everything is hot and creamy.
This dip can also be made ahead of time and reheated before serving, making it a great option for parties.
