1 measuring spoons
1 slow cooker (optional)
- 1 pound ground sausage mild or spicy
- 10 ounces diced tomatoes with green chilies Rotel
- 8 ounces cream cheese softened
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon black pepper
- to taste jalapeños or hot sauce optional for spiciness
- as needed tortilla chips for serving
In a large skillet over medium heat, cook the ground sausage until browned and fully cooked, about 5-7 minutes. Break it up into small pieces with a wooden spoon as it cooks.
Drain any excess fat from the sausage and reduce heat to low.
Add the diced tomatoes with green chilies (including the juice), cream cheese, cheddar cheese, Monterey Jack cheese, garlic powder, onion powder, and black pepper to the skillet.
Stir the mixture until the cheeses melt and the dip becomes creamy, about 5-10 minutes.
Taste and adjust seasoning if necessary. For a spicier kick, you can add additional diced jalapeños or hot sauce.
Transfer the dip to a mixing bowl or directly serve it from the skillet. Serve warm with tortilla chips for dipping.
If you want to make this dip in a slow cooker, cook the sausage in a skillet and then transfer all ingredients to a slow cooker. Cook on low for 2-3 hours until everything is hot and creamy.
This dip can also be made ahead of time and reheated before serving, making it a great option for parties.
