Ingredients
  

  • 9 ounces cheese tortellini fresh or frozen
  • 1 tablespoon olive oil
  • 1 pound Italian sausage casings removed
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup spinach fresh
  • 1/2 cup grated Parmesan cheese

  • 1 teaspoon Italian seasoning

Instructions
 

  • Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions, usually about 3 to 5 minutes for fresh, 7 to 9 minutes for frozen. Drain and set aside.
  • In a large skillet over medium heat, heat the olive oil. Add the Italian sausage, breaking it apart with a wooden spoon. Cook until browned, about 5 to 7 minutes.
  • Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  • Pour in the heavy cream and chicken broth, stirring to combine. Bring the mixture to a gentle simmer.
  • Add the fresh spinach and cook until wilted, about 2 minutes.
  • Stir in the cooked tortellini, Parmesan cheese, salt, pepper, and Italian seasoning. Cook for a couple more minutes until everything is heated through and well combined.
  • Serve hot with additional Parmesan cheese on top if desired.

Notes

Feel free to substitute the Italian sausage with turkey sausage or a vegetarian alternative for a healthier option.
You can add other vegetables like bell peppers or mushrooms for more texture and flavor.
