Preheat your oven to 375°F (190°C).
Lightly grease a muffin tin with cooking spray or brush with oil.
Gently press each wonton wrapper into the muffin tin cups, forming a little cup shape. Bake in the preheated oven for about 8 minutes or until lightly browned.
While the wonton wrappers are baking, heat olive oil in a skillet over medium heat.
Add the ground sausage to the skillet, breaking it apart with a spoon. Cook until browned and cooked through, about 5-7 minutes.
Stir in the diced bell pepper, green onions, soy sauce, garlic powder, and black pepper to the sausage. Cook for an additional 3-5 minutes until the vegetables are tender.
Remove the wonton cups from the oven. Spoon the sausage mixture into each wonton cup.
Top each filled cup with shredded cheese.
Return the muffin tin to the oven and bake for another 5-7 minutes, until the cheese is melted and bubbly.
Allow the cups to cool slightly before serving.
