In a large mixing bowl, combine the melted butter, minced garlic, lemon juice, paprika, Italian seasoning, salt, and pepper. Whisk until well combined.
Add the peeled and deveined shrimp to the mixing bowl, tossing to coat them evenly in the marinade. Cover the bowl and let the shrimp marinate in the refrigerator for at least 10 minutes.
While the shrimp is marinating, preheat your grill or grill pan over medium-high heat.
Thread the marinated shrimp onto the skewers, making sure to leave a little space between each shrimp for even cooking.
Once the grill is hot, place the shrimp skewers on the grill. Cook for about 2-3 minutes on each side, or until the shrimp are pink and opaque.
Use a basting brush to apply any remaining garlic butter sauce onto the shrimp while cooking for added flavor.
Remove the skewers from the grill and let them cool slightly. Transfer the skewers to a serving platter, sprinkle with chopped fresh parsley, and serve with lemon wedges on the side.
