  • 8 slices thick bread (such as brioche or challah)

  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 tsp ground cinnamon
  • 2 tbsp unsalted butter (for frying)

Instructions
 

  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and well blended.
  • Spread the cream cheese mixture onto four slices of bread, creating a generous layer. Top each with another slice of bread to form sandwiches.
  • In a separate bowl, whisk together the eggs, milk, and ground cinnamon until fully combined.
  • Heat the frying pan or griddle over medium heat and melt 1 tablespoon of butter.
  • Dip each stuffed sandwich into the egg mixture, ensuring both sides are coated well but not overly soggy.
  • Place the sandwiches in the hot pan and cook for about 3-4 minutes on each side, or until golden brown. Add more butter as needed for frying.
  • Once cooked, remove the sandwiches from the pan and let them cool for a minute before cutting them in half.
  • Serve warm with maple syrup drizzled on top and fresh fruit, if desired.

Notes

Feel free to customize the filling by adding chocolate chips, berries, or nuts to the cream cheese mixture.
For a healthier option, you can use whole grain bread and reduce the amount of sugar in the filling.
