1 wooden spoon or ladle
1 set measuring cups and spoons
1 canning jar or container for leftovers
- 1 lb ground beef (or turkey)
- 1 medium onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (14.5 oz) diced tomatoes, with juice
- 1 can (12 oz) tomato sauce
- 1 packet taco seasoning (about 1 oz)
- 2 cups beef broth (or vegetable broth)

In a large pot or Dutch oven, brown the ground beef (or turkey) over medium heat until cooked through. Drain any excess fat.
Add the chopped onion to the pot and sauté for about 5 minutes, or until the onion is softened.
Stir in the black beans, kidney beans, corn, diced tomatoes (with juice), tomato sauce, taco seasoning, and beef broth. Mix well.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 20-25 minutes, stirring occasionally.
Season with salt and pepper to taste before serving.
Serve hot, with optional toppings as desired.
This soup can be made a day in advance and stored in the refrigerator. The flavors will meld together even more.
Feel free to swap out the beans or add other veggies like bell peppers or zucchini for extra nutrition.
To make it vegetarian, substitute the meat with additional beans or lentils and use vegetable broth.
